Unstuffed Shells
This is a quick and easy alternative to Stuffed Shells. Kate's family loves this recipe,
and so does Kate - it is easy, fast, and a great way to disguise leftovers!
1box Large Shells (NOT Jumbo Shells - the ones you stuff - the next smaller size)
1 jar of your favorite pasta sauce
1 small (8 ounce) container of ricotta cheese
1 - 2 cups shredded mozzarella cheese
Cook pasta till al dente in salted water, drain well. Return pasta to cooking pot, and
add ricotta. Stir well. Add all but a handful of the mozzarella and half of the sauce,
and give it a quick stir. Pour into a large casserole dish and cover with remaining
sauce. Sprinkle with remaining mozzarella. Cook at 375 degrees until heated
through - about 15 - 20 minutes.
Leftovers shine in this dish - dice up leftover meats, toss in some veggies, you name
it. If you are adding these, toss them in just before adding the sauce and mozzarella.
Serve with a salad and nice crusty bread.
