| Jean's Special Breakfast Pancakes at Shaker Meadows 1/2 cup flour 1/4 cup quick oats (or use regular oats - put through a food processor) 1/4 cup yellow corn meal 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon nutmeg 1 tablespoon corn oil 1 egg 3/4 cup buttermilk 1/4 cup whole milk Beat milk, oil, and egg. Whisk together dry ingredients. Whisk milks into dry ingredients. Let sit at least 15 minutes. Bake on hot griddle. Serve immediately. |
